For this occasion, an exceptional selection of Bollinger’s most revered cuvées has been curated, including the iconic Special Cuvée, the vintage-driven B16, the prestigious La Grande Année, the magnificently matured RD 2008, and the rare still red wine La Côte aux Enfants Coteaux Champenois. Each expression reveals a different facet of the Maison’s heritage and uncompromising pursuit of excellence. Mr. Shinbo – official Bollinger Ambassador, will guide you through Bollinger history, philosophy and passions on that night.
Complementing these distinguished champagnes, Chef Shibahara of Pierre — proudly awarded one Michelin star for nine consecutive years — will present an exquisitely composed French menu, each course thoughtfully paired to enhance the character and elegance of every glass.

After studying Journalism at San Diego State University, he spent over 20 years working in PR and marketing at major retail and luxury brand companies.
In 2021, he became an official ambassador for Champagne Bollinger. With a deep love and passion for Bollinger, he hosts tasting seminars and events across Japan, sharing the story and philosophy behind each cuvée. His words have inspired many people and continue to bring the world of Champagne to life.
