“Perrier-Jouët”, the champagne house with a tradition spanning over 200 years, will be hosting a special Maker’s Dinner.
For this event, Séverine Frerson, 8th Cellar Master, Maison Perrier Jouët, will travel to Japan to share her own thoughts and philosophy on Champagne-making in person. Since the House’s founding in 1811, we invite you to experience her distinctive approach, one defined by a pursuit of delicate floral aromas, set against this backdrop of enduring tradition.
The evening will also feature a special course menu by Head Chef Yoshitaka Shibahara of “Pierre”, the French restaurant celebrating its 10th anniversary in the Michelin Guide. Together, these elements promise an evening in which you can fully savour the world and depth that Perrier-Jouët has to offer.

Born in 1975 in Sillery, in the Champagne region, Séverine Frerson set her sights on winemaking at the age of 15. She earned her degree in oenology from the University of Reims in 2001, and after gaining experience at major Champagne houses, joined Maison Perrier-Jouët in 2018. In October 2020, she was appointed the House’s 8th Cellar Master — the first woman to hold the role in Maison Perrier-Jouët’s history. While upholding a heritage spanning more than two centuries, she continues to pursue precision and refinement in winemaking through an innovative approach that unites floral aromas with texture.
Her words, “There is no wrong answer in wine,” capture her passion, intuition, and the philosophy she holds dear of sharing that experience with others.

- Amendments and cancellations are accepted up to 4 days prior to your reservation. A cancellation fee of 50% of the meal cost applies from 3 days prior, and 100% from 2 days prior.
- Children the age of 12 years and under are not allowed in Pierre.
- The dress code is smart casual, and a dinner jacket is recommended(Please refrain from using shorts and slippers).
- For groups of 6 or more and Private room use, a 50% cancellation fee prior to 3 days and 100% prior to 2 days of the booking.
